Can you bake with discarded sourdough starter?

Yes, you can bake with discarded sourdough starter. In fact, baking with your sourdough discard is an excellent idea! Not only you will create delicious homemade cakes and bakes, but you will be using your sourdough starter to its full potential, without wasting any of it! 

While the discard may no longer be suitable for making bread, it can be used in so many recipes, such as scones, pancakes, waffles, muffins, cakes, and even pizza crusts.

BEST SOURDOUGH STARTER DISCARD SCONES: EASY RECIPE

Here is my very easy recipe to make scones using your extra sourdough discard.

This is nothing more than a classic recipe but with the addition of sourdough starter.

It’s great way to use up your discard sourdough starter instead of throwing it away!

INGREDIENTS

This easy sourdough scone recipe uses just a few basic ingredients. 

Here’s the list of both dry and wet ingredients.

DRY INGREDIENTS

  • 113g of cold unsalted butter, cubed (or one stick of butter);
  • 250g of all purpose flour (or 2 cups);
  • 100g of granulated sugar (or ½ cup);
  • ½ teaspoon cooking salt;
  • 2 tsp baking powder;
  • 1 cup of your favorite add-ins (this is optional, and you can choose from a variety of ingredients, such as chocolate chips, dried fruit, blueberries, etc.).

WET INGREDIENTS

  • 125g of sourdough discard starter (or ½ cup);
  • 1 large egg;
  • 2 tsp of vanilla extract (optional);
  • 2 Tbsp of heavy cream or full fat dairy milk.

INSTRUCTIONS

In a medium bowl, add the flour, sugar, salt and baking powder. Mix the dry ingredients well.

Add the cold butter to the mix, and start cutting it with the help of a fork or a pastry cutter if you have it.

Keep working the butter and flour mixture till you reach the consistency of bread crumbs.

I generally use my food processor for this job, so feel free to take advantage of it if you own one!

PRO Tip

  • If you don’t have a food processor, instead of simply cutting the butter in cubes using a knife, use a cheese grater!
  • The cheese grater will cut through the cold butter easily and will make your job easier when you are crumbling the butter with the flour mixture!

At this point, add the mix-in of choice if using. Make sure to stir well, as to cover the add-in with the floury mixture.

In a separate bowl, whisk together the egg, vanilla extract (if using), cream (or milk) and sourdough discard. Mix the wet ingredients well and then add them to the dry ones.

Now, place the scone dough on a lightly floured surface and gently knead it for a minute or two. When the dough comes together in a ball, start flattening it down to form a round shape. Ensure the dough is at least 2cm (or about 1 inch) thick.

With the help of a cookie cutter or a sharp knife, start cutting the dough into separate slices or wedges.

Line a baking tray with parchment paper, and gently place your unbaked cut scones on it.

Refrigerate the tray for at least 30 minutes before baking.

In the mean time, pre heat your oven to 200°C (or 400°F ).

When you are ready to bake, take your prepared baking sheet from the fridge, and brush the tops of the scones with milk or cream.

If you like, sprinkle some brown sugar on top. Coconut sugar works very well too.

Bake for about 20-25 minutes, until the top of the scones is golden brown.

STORAGE

These sourdough discard scones are best if enjoyed fresh. However, you can store any leftover scones in an airtight container at room temperature for a couple of days.

I find that, after a couple of days, the scones become too hard and unpleasant to eat.

For longer storage, it would be best to freeze the scones. 

In order to do that, wait till the are completely cooled down after baking, place them in a freezer safe container (or wrap them in foil), and store them in the freezer for up to 6 weeks.

Make sure to let them thaw at room temperature before consuming.

CAN YOU MAKE SOURDOUGH DISCARD SCONES AHEAD OF TIME?

You can certainly prepare the dough in the evening, leave the unbaked scones in the fridge overnight, and bake them fresh in the morning for a delicious breakfast!

It’s so easy and quick to make and it can be made ahead of time.
